- Cut the chicken breasts into 1-inch cubes and place them in a large mixing bowl.
- In a separate bowl, whisk together the olive oil, lemon juice, Greek yogurt, minced garlic, oregano, paprika, cumin, salt, and black pepper.
- Pour the marinade over the chicken cubes, ensuring they are evenly coated. Cover the bowl and refrigerate for at least 2 hours, or up to overnight for maximum flavor.
- Preheat your grill or grill pan over medium-high heat. If using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning.
- Thread the marinated chicken cubes onto skewers, leaving a bit of space between each piece for even cooking.
- Grill the chicken souvlaki skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and slightly charred on the edges. Ensure the internal temperature of the chicken reaches 165°F (74°C).
- Remove the skewers from the grill and allow them to rest for 5 minutes before serving.
- Serve the chicken souvlaki with pita bread, tzatziki sauce, and a side of fresh salad or roasted vegetables for a complete Greek-inspired meal.
