  1. Cut the chicken breasts into 1-inch cubes and place them in a large mixing bowl.
  2. In a separate bowl, whisk together the olive oil, lemon juice, Greek yogurt, minced garlic, oregano, paprika, cumin, salt, and black pepper.
  3. Pour the marinade over the chicken cubes, ensuring they are evenly coated. Cover the bowl and refrigerate for at least 2 hours, or up to overnight for maximum flavor.
  4. Preheat your grill or grill pan over medium-high heat. If using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning.
  5. Thread the marinated chicken cubes onto skewers, leaving a bit of space between each piece for even cooking.
  6. Grill the chicken souvlaki skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and slightly charred on the edges. Ensure the internal temperature of the chicken reaches 165°F (74°C).
  7. Remove the skewers from the grill and allow them to rest for 5 minutes before serving.
  8. Serve the chicken souvlaki with pita bread, tzatziki sauce, and a side of fresh salad or roasted vegetables for a complete Greek-inspired meal.

Notes

For best results, marinate the chicken overnight. You can substitute chicken breasts with chicken thighs for a juicier option.
