Equipment

  • crockpot
  • mixing bowl
  • measuring spoons
  • forks
  • knife

Method

  1. Place the chicken breasts in the bottom of your crockpot in a single layer.
  2. In a small bowl, mix together the salsa verde, garlic powder, onion powder, cumin, chili powder, salt, and pepper.
  3. Pour the salsa verde mixture evenly over the chicken breasts, ensuring they are fully coated.
  4. Cover the crockpot with its lid and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and fully cooked.
  5. Once the chicken is cooked, use two forks to shred the chicken directly in the crockpot, mixing it with the salsa verde sauce.
  6. Stir in the lime juice to brighten up the flavors.
  7. Serve the salsa verde chicken warm, garnished with fresh cilantro if desired. It's perfect for tacos, burritos, rice bowls, or as a main dish.

Notes

You can substitute chicken thighs for chicken breasts if preferred. Adjust the spice level by adding more chili powder or using a spicier salsa verde.
