Method
 

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the cottage cheese, egg, and olive oil. Mix until smooth and well combined.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, salt, and sugar.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. If the dough is too dry, add 1 tablespoon of water to bring it together.
  5. Turn the dough out onto a lightly floured surface and knead gently for 1-2 minutes until smooth.
  6. Divide the dough into 6 equal portions. Roll each portion into a ball, then flatten slightly and poke a hole in the center to form the flagel shape.
  7. Place the flagels on the prepared baking sheet. If desired, sprinkle sesame seeds or poppy seeds on top and press them gently into the dough.
  8. Bake in the preheated oven for 18-22 minutes, or until golden brown and cooked through.
  9. Allow the flagels to cool slightly before serving. Enjoy warm or at room temperature!

Notes

You can substitute sesame seeds or poppy seeds with other toppings like sunflower seeds or coarse salt for added flavor.
