Chocolate Banana Peanut Butter Bites

Method
 

  1. Peel the bananas and slice them into 1/4-inch thick rounds.
  2. Spread a small amount of peanut butter onto one banana slice and top it with another slice to create a mini sandwich. Repeat until all slices are paired.
  3. Place the banana-peanut butter sandwiches on a baking sheet lined with parchment paper and freeze them for 15-20 minutes to firm up.
  4. While the bites are freezing, melt the chocolate chips and coconut oil (if using) in a microwave-safe bowl in 20-second increments, stirring after each interval until smooth.
  5. Remove the chilled banana bites from the freezer and dip each one into the melted chocolate, ensuring it's fully coated. Use a fork or toothpick to help with dipping.
  6. Place the chocolate-coated bites back onto the parchment-lined baking sheet. Add sprinkles, chopped nuts, or shredded coconut for extra decoration if desired.
  7. Return the bites to the freezer for another 15-20 minutes, or until the chocolate is set.
  8. Serve immediately or store in an airtight container in the freezer for up to a week.

Notes

You can substitute almond butter or sunflower seed butter for peanut butter if desired. Use dark chocolate chips for a richer flavor.
